In a food processor, combine the chickpeas, tahini, lemon juice, minced garlic, cumin, and a pinch of salt.
Process the mixture until it's well blended and smooth. If the mixture is too thick, you can add a tablespoon of water to achieve the desired consistency.
Taste the hummus and adjust the seasonings. Add more salt, lemon juice, or cumin if needed.
Transfer the hummus to a serving dish and create a well in the center with the back of a spoon.
Drizzle extra-virgin olive oil over the top of the hummus.
If desired, garnish the hummus with chopped fresh parsley, a sprinkle of paprika, and toasted pine nuts.
Serve the hummus with pita bread, fresh vegetables, or as a spread for sandwiches.
